We love raising our Red Devon cattle at Tiffin Farm. Red Devons are a British Heritage breed. They are 100% grass-fed and grass-finished, and they rotate through our pastures to maximize soil and animal health. As a local farm, we prioritize serving customers near the farm in and around Charlottesville, Virginia. We hope to build long-term relationships with a group of loyal customers as we provide beef year after year.

“I had the privilege of buying a quarter from Michael Larsen at Tiffin Farm in November, and am extremely excited about the quality and price. For the first couple weeks, we only sampled some of the flank steak (for stir fry) and ground beef, but decided to break into the "good stuff" over Christmas...

The Christmas roast (sirloin) was excellent--tender and full of flavor. (I aged it a couple days in the refrigerator, which is definitely worth the time, and the result was perfect.) And the beef stew made from one of the chuck roasts was perfect for a winter evening--hearty and rich. But the best night so far was the "steak comparison" night. I cooked ribeyes and New York strips side-by-side, using the same reverse-sear method. I am pretty meticulous: rinse, pat dry thoroughly, salt and pepper heavily, allow to sit for at least an hour, bake on a rack at 200 degrees till internal temperature hits 100 degrees, then a very fast and hot sear in a little bacon grease in a cast iron. They were perfect! Really, the most enjoyable aspect was how delicate and distinct the flavor of each cut was. Sometimes store-bought beef tastes generic, but these two cuts were totally different in a very pleasing way. The grass-fed finish (in my opinion) allows a more subtle and nuanced flavor. The family was split over which cut was better, but all of the meat disappeared VERY quickly.

Why Buy Beef Direct?

We know what you’re thinking. 100 pounds of beef? That’s a lot of beef to store! It’s true. You’ll likely need to buy a new freezer to store your meat, or you can split a share with friends. To store 100 pounds, you’ll need about 5 cubic feet of freezer space to allow for air circulation and ease of access to your supply.

The USDA estimates that the average American will consume 57.8 pounds of beef in 2024. You’ll be able to estimate your own beef consumption best. In short, if there are more than 2 people in your household, you might benefit from buying in bulk.
